Overnight oats – Chia

Is it already clear that I'm a overnight oat fanatic? :) This recipe sits somewhere between overnight oats and chia pudding – soft, satisfying and energising for the morning, with infinite possibilities to vary the flavour!

Just one word of 'caution' – if you are not used to eating chia seeds you may want to start with about a teaspoon per portion and build up gradually. Chia is not only very rich in fibre but the consistency may need some getting used to – my hubby A thought chia seeds tasted like 'frog spawn' when I first gave them to him! I then did a sneaky manoeuvre and added small amounts to his oats without him noticing, gradually increasing and now he's a total convert!

RECIPE: BASIC OVERNIGHT CHIA OATS

SERVES ONE

150 ml oats
1.5 tablespoons chia seeds
0.5-1 teaspoon honey | or 1 teaspoon coconut palm or maple syrup | or half a banana in thin slices or mashed
250 ml nut milk of choice, or a mix of nut milk and water if the milk is rich

METHOD:

Place all ingredients in a bowl or better still, a jar with screw lid, and give it a good shake or stir. Leave covered overnight to plump up. Unless the weather is REALLY hot I don’t like chilling my oats in the fridge – I like soothing room temperature in the morning. On top of that, eating chilled food cools the guts and slows digestion down, something better avoided.

This is the basics. To make things more interesting I may add any of the following before letting the mixture soak overnight:

a handful of frozen berries
fresh fruit chopped or grated
1 teaspoon freeze dried berry powder like acai or black currant
half a teaspoon of matcha green tea powder (*Meiko by Matchaeologist)
a pinch of vanilla, cinnamon, cardamon, grated ginger, high quality salt
a few drops of rose or orange blossom water
a squeeze of lemon or lime
a teaspoon raw cacao nibs
1-2 teaspoons linseeds
a dollop cashew cream

In the morning you have full control of what you top your overnight oats with!
