I’ve been fascinated by the Japanese concept of 5 colours in food ever since discovering it while looking for bento inspiration in Japan. White, black, red, green and yellow should all be included in a meal to make it complete, according to old tradition with roots in Buddhism.
So, I’m very very excited to explore these 5 colours in a popup dinner with Kanpai Sake, the UK's first craft sake brewery. On Thursday 13 June we are bringing you an evening with one dish of each colour, paired with sake down in Kanpai’s cosy taproom in Peckham (London).
The menu will celebrate plant based food, seasonality and my Asian-Scandi heritage :) It also expresses the creativity of ingredients that can be sourced package-free, or with minimal plastic. This is something I’ve focused on since starting an experiment of ‘3 months of minimal plastic’ this January – an journey which is ongoing :)
